A rich and creamy vegan cheesecake dip that tastes like malted robin eggs. Great for dipping fruit or cookies!
Ingredients:
- 1 cup raw cashews, soaked for 4 hours or overnight, drained and rinsed
- 1/4 cup coconut cream
- 1/4 cup maple syrup
- 2 tablespoons almond milk
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup vegan white chocolate chips, melted
- 1/4 cup malted robin eggs, crushed plus more for topping
Instructions:
Put the cashews that have been soaked, coconut cream, maple syrup, almond milk, lemon juice, vanilla extract, and salt in a food processor
Mix until it's creamy and smooth
Blend again after adding the melted vegan white chocolate chips to make sure everything is well mixed
Put the mixture in a bowl, and then add the crushed malted robin eggs
Add more crushed malted robin eggs on top
You can dip cookies or fruit in it
