Ingredients:
- 1 lb dried white beans, rinsed and soaked overnight
- 4 cloves garlic, minced
- 1 onion, diced
- 3 carrots, peeled and sliced
- 3 celery stalks, chopped
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 bay leaves
- 2 cups spinach, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
Instructions:
In a slow cooker, combine soaked white beans, garlic, onion, carrots, celery, vegetable broth, thyme, rosemary, salt, pepper, and bay leaves
Cover and cook on low for 6-8 hours or until beans are tender
About 30 minutes before serving, stir in chopped spinach and parsley
Drizzle with olive oil before serving
Remove bay leaves before serving
