Massaged Kale Salad with Blueberries and Goat Cheese



The flavors and textures in this Massaged Kale Salad with Blueberries and Goat Cheese go so well together. When you massage the kale, it gets soft and goes well with the sweet blueberries, the creamy goat cheese, and the crunchy walnuts. A honey and balsamic dressing brings it all together for a tasty and healthy salad.

Ingredients:

  • 4 cups kale leaves, stems removed and chopped
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh blueberries
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped walnuts
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey

Instructions:

Wash and dry the kale leaves thoroughly

In a large bowl, drizzle olive oil over the kale leaves and sprinkle with salt and black pepper

Using your hands, massage the kale leaves for 2-3 minutes until they become tender and slightly wilted

Add the blueberries, crumbled goat cheese, chopped red onion, and chopped walnuts to the kale

In a small bowl, whisk together balsamic vinegar and honey to make the dressing

Drizzle the dressing over the salad and toss to combine all the ingredients

Serve immediately and enjoy!
