Keto Avocado Mug Cake

Ingredients:

  • 1 ripe avocado
  • 2 tbsp almond flour
  • 1 tbsp cocoa powder
  • 2 tbsp erythritol or preferred keto-friendly sweetener
  • 1 egg
  • 1/2 tsp baking powder
  • Pinch of salt
  • Optional: 1 tbsp sugar-free chocolate chips or chopped nuts for topping

Instructions:

In a microwave-safe mug, mash the avocado until smooth

Add almond flour, cocoa powder, erythritol, egg, baking powder, and salt

Mix until well combined

Microwave on high for 1-2 minutes, or until the cake is set

Let it cool for a minute, then optionally top with sugar-free chocolate chips or chopped nuts
