Greek Chicken with Tomatoes, Cauliflower and Feta



Tender chicken breasts are baked with cherry tomatoes, cauliflower, and tasty feta cheese in this Greek-style chicken dish. This Mediterranean-style meal is healthy, filling, and full of flavor.

Ingredients:

  • 4 chicken breasts
  • 2 cups cherry tomatoes
  • 1 small cauliflower, cut into florets
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

Get the oven ready by heating it up to 400F 200C

Add the cauliflower florets, minced garlic, olive oil, dried oregano, salt, and pepper to a large bowl

Toss the vegetables until they are well covered

Put chicken breasts on a baking sheet that has foil or parchment paper on it

Add salt, pepper, and a little dried oregano to both sides

Arrange the cauliflower and tomato mix around the chicken on the baking sheet

Put it in an oven that has already been heated up and bake for 25 to 30 minutes, or until the chicken is done and the vegetables are soft

Flake some feta cheese over the chicken and vegetables in the last five minutes of baking

Before serving, sprinkle with fresh parsley
