Cheese Tortellini with Walnut Pesto



A tasty new take on a classic pasta dish is this cheese tortellini with walnut pesto. The fresh basil, toasted walnuts, and Parmesan cheese used to make the creamy pesto sauce go perfectly with the cheesy tortellini. This meal is very quick and easy, and it tastes great!

Ingredients:

  • 1 lb cheese tortellini
  • 2 cups fresh basil leaves
  • 1/2 cup walnuts
  • 2 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • Salt to taste
  • Black pepper to taste

Instructions:

Follow the directions on the package to cook the tortellini until it is al dente

Then, drain it and set it aside

Put basil leaves, walnuts, garlic, Parmesan cheese, and olive oil in a food processor and blend them together

Pulse until everything is smooth and well mixed

To taste, add salt and black pepper to the pesto

Toss the cooked tortellini with the walnut pesto until it's well covered

Serve hot, and if you want, top with more Parmesan cheese
