This white bean garlic toast with a spicy kick is a tasty and healthy take on garlic bread. Whole grain toast tastes great with the garlic, lemon, and olive oil mixed into the creamy white bean spread.
Ingredients:
- 1 can white beans, drained and rinsed
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- 4 slices whole grain bread
- Fresh parsley, for garnish
Instructions:
Preheat your oven to 375F 190C
In a food processor, combine white beans, minced garlic, olive oil, lemon juice, lemon zest, salt, and pepper
Blend until smooth and creamy
Place bread slices on a baking sheet and toast in the preheated oven for 5 minutes, or until slightly crispy
Spread the white bean mixture evenly onto each toasted bread slice
Return the topped bread slices to the oven and bake for an additional 5 minutes
Garnish with fresh parsley before serving
