Cheesy Mashed Potatoes with Gruyere and Caramelized Onions



Adding rich Gruyere cheese and sweet caramelized onions to creamy mashed potatoes makes them taste even better. You can eat this dish as a side dish or as the main course.

Ingredients:

  • 4 large potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 2 onions, thinly sliced
  • 1 cup grated Gruyere cheese
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions:

Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes

While the potatoes are boiling, heat olive oil in a skillet over medium heat

Add the sliced onions and cook until caramelized, about 15 minutes

Set aside

Drain the boiled potatoes and return them to the pot

Mash them using a potato masher or fork

Add butter, milk, and half of the grated Gruyere cheese to the mashed potatoes

Mix well until the cheese is melted and the ingredients are well combined

Season with salt and pepper to taste

Transfer the mashed potatoes to a serving dish and top with the caramelized onions and the remaining grated Gruyere cheese

Serve hot, garnished with fresh herbs if desired
