Ingredients:
- 6 slices bacon, chopped
- 1 pound boneless, skinless chicken breasts, diced
- 4 jalapeno peppers, seeded and diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Chopped fresh cilantro, for garnish optional
Instructions:
Toast the bacon pieces in a pan over medium-low heat until they are golden brown
Take the bacon out of the pan and set it aside
Leave the bacon grease in the pan
Put the chicken dices in the pan and cook them until they are browned all over
Then move them to the slow cooker
Dice the jalapenos, onion, and garlic and add them to the pan
Put the food in the slow cooker after cooking it until it gets soft
Add chicken broth to the slow cooker along with the vegetables and chicken
When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours
Put softened cream cheese, shredded cheddar cheese, and heavy cream in the slow cooker about 30 minutes before you want to serve
Mix the cheeses in until they are melted and fully mixed in
Add pepper and salt to taste
If you want, you can serve it hot with chopped fresh cilantro on top
